I just realized that compared to the M1, Leclerc, and Leopard 2, the Challenger series have a somewhat solid plate at the rear, whereas the first three tanks have engine grills. Does that make the Challenger 1 and 2 better protected ass-wise compared to the M1, et al?

No. The exhaust grills are made up of interleaved angled plates that if anything provide better protection than a single plate of similar thickness.

The exhausts are not at the back like most tanks they are at the front of the pack just behind the turret with the air filters near the back on the deck so none of the pack neads any acess to the very rear of the tank so it is a solid steel plate.
